The Saturday, 75% Whole Wheat Bread #3

After I was ill, I seemed to develop a reaction to white flower where I would get bloating and stomach cramps. I am glad to say that this has now stopped, I tested it the other week on a vegan four cheese pizza (in Brighton – so surprise). If anything could test it that would!

I was a little bit sad about doing a lot less bread as it will always remind me of Fraser who I did Lockdown Loaves with.

I have been reading a lot about food so I wanted to do this bread with seeds in. My first attempt was probably about 80% hydration, which without the binding gluten power of a lot of white flour was a bit flat, but very tasty.

So this time I worked out that the seed dry weight was 200g and after draining was 400g (as it is important to soak them). So I would normally hydrate at 62% so tried adding 400g of water, but it was much too dry, so added another 100 which seems perfect. I also used the water I had used for soaking the seeds, so the taste might be interesting.

I have used inly 5 grams of yeast so it will be a slow rise, however summer is finally here!!!!! ( at the summersolstice ) so it may rise a bit quicker.

I wlil also try to get it in the fridge ovenight as they alwsy seem to cook better from the fridge!

The bread rose pretty well and shaped veyr nicely. Into the fridge overnight it went and you can see the result above.

We had friends over for dinner and the bread seemd to go down very well! I will be making this one again soone, but I have run out of flour. Maybe a trip to the Tide Mill at … just checked out of flour! Maybe Shiptons then!

Goodness Dave, I do admire your staying power, working out seed weight, perfect amount of water required etc.
I am very glad this is helping you.
I have been very strict with my intake of bread this week, but went into Lidl for. Something, and there ‘IT’ was before my eyes all the wonderful breads that one desires. I gave in to a croissant for me and we had salad baguettes for tea.
Now back to normal. Judith x🌻
